Maple Cinnamon Baked Donuts

I mentioned in my last post on Arugula salad that i ordered a few things to my sisters place in Boston. Among them was a non-stick donut pan, courtesy of Amazon.


 It looked pretty small, but since then I have seen some in stored and they are all quite small. Some of my friends had noticed I was starting to compile donut recipes on Pinterest- feel free to follow my boards. Pinterest is such a great way to organize and keep track of recipes to try- among other things. Anyway,  I started off with a simple recipe from Tidymom - adapted slightly of course-, and was surprised at how easy and quick it was to make. I'd say about 5-10 min prep and 10 minutes cooking time. It was exciting to see the donuts actually looked like real donuts. Of course, baked donuts will not taste the same as friend ones, but  they are way healthier. 


Ingredients
1 cup all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
pinch of salt
1 egg (lightly beaten)
1/3 cup buttermilk
1 tablespoon canola oil
2 teaspoon lemon juice
2 1/2 tablespoon real maple syrup
Topping
2 tsp cinnamon
1/4 C sugar
1-2 Tbsp butter (melted)
Instructions

Directions
Preheat oven to 400° F
Mix cinnamon and sugar together in small bowl or plate and set aside.
In large bowl, whisk together all the dry ingredients. Make a hole in the center of the dry ingredients and pour in wet ingredients in the hole. Gently fold everything together until combined.
Place the donut batter in a pastry bag (or plastic bag) snip off 1/2" of the tip and pipe it into the wells of donut pan. Be careful not to over fill. Over filling the wells will create donuts without holes.-- I had never done this before, it was fun!! 
Bake for 8-10 minutes or until golden brown, and turn out a wire rack.- At this point they look a bit like bagels, this is normal do not fret!! once you flip them over the top will look better.



While still a little warm, use pastry brush to butter your donuts and then dip each donut in the cinnamon sugar mixture to coat.
