Egg in a coconut nest

















This recipe is from the cookbook, Make it Paleo- by Bill Staley and Hayley Mason, which arrived in the mail on the 30th day of my 30 day challenge. Ah well, I still plan on integrating many Paleo habits into my lifestyle. In a review of the cookbook, someone actually said this was the only original and intriguing recipe. Well it definitely caught my eye right away.

 These eggs are easy to make and look so cute and fancy. Nice way to switch up regular friend eggs.


Ingredients:
- Eggs
- Shredded unsweetened coconut ( 1/2- 1 Tablespoon)

Directions:
-Preheat oven to 350F
- Separate egg yolks and whites
-Beat egg whites until stiff, and fold in coconut
- place egg whites in "nests" on parchment covered baking sheet. sprinkle with more shredded coconut. Put egg yolk on top.
- Bake for about 10 minutes, until peaks are brown.
